New Product Seasoning System

Burns & McDonnell designed a seasoning system that will allow the client to partner with a national restaurant chain to sell a new product. The seasoning project involved modifications to the existing processing lines at the client’s facility in Mexico. Previously, the products exiting the fryer were unseasoned before packaging. The project added new seasoning equipment downstream of the fryer to provide plant flexibility in seasoning the finished product. The new cooling conveyor, seasoning system and product handling equipment were unique to this plant and were designed and developed, first as prototypes, then scaled up for mass production. Work included removing the existing pack off conveyors and related equipment. It also included installing cooling conveyors, chiller, seasoning distribution conveyors and equipment, dust collection system, and HVAC systems. New racking systems were added to the existing seasoning storage area.
